What Salsa borracha means
Salsa borracha is a Mexican salsa or sauce name of Spanish origin meaning "drunken sauce". It is built from Spanish salsa (sauce) and borracha (drunk, feminine). It is pronounced SAL-sah boh-RRAH-chah, and it is most associated with Hidalgo.
Made with pulque, or beer where pulque is scarce, so the sauce itself is the one that has been drinking. It is the traditional partner to barbacoa in the states around Mexico City.
