What Escabeche means
Escabeche is a Mexican salsa or sauce name of Arabic (via Spanish) origin meaning "vinegar pickle". It comes from Arabic as-sikbāj (a vinegar-stewed meat dish), from Persian sikbā. It is pronounced es-kah-BEH-cheh, and it is most associated with Yucatán.
A Persian dish name that became the Spanish word for anything preserved in vinegar. In Mexico it covers both jalapeños en escabeche, the canned pickled chiles, and Yucatán's escabeche oriental, a turkey dish.
