What Pico de gallo means

Pico de gallo is a Mexican salsa or sauce name of Spanish origin meaning "rooster's beak". It is built from Spanish pico (beak) and de (of) and gallo (rooster). It is pronounced PEE-koh deh GAH-yoh, and it is most associated with the whole country.

Two explanations circulate and neither is documented: that it was eaten pinched between finger and thumb, the hand pecking like a beak, or that the red, white and green look like a rooster's comb. In much of Mexico it is simply salsa mexicana, for the flag colours.
