What Chiles en nogada means
Chiles en nogada is a Mexican main dish name of Spanish origin meaning "chiles in walnut sauce". It comes from Spanish chile + nogada (walnut sauce, from nogal, walnut tree). It is pronounced CHEE-les en noh-GAH-dah, and it is most associated with Puebla.
Nogada simply means a walnut sauce. The tradition that Augustinian nuns built the dish in the colours of the new flag for Iturbide in 1821 is repeated everywhere and documented nowhere.
