Campechana is a Mexican bread name of Spanish origin meaning "woman from Campeche, or a mixture". It comes from Spanish campechano (easygoing, mixed) or Campeche (the Gulf state) + -ana. It is pronounced kahm-peh-CHAH-nah, and it is most associated with Mexico City.
Two accounts compete and neither is documented: campechano in Mexican Spanish means both 'from Campeche' and 'genial, mixed together', which fits a pastry of layered scraps, while bakers also tell of a Campeche-born baker in Mexico City whose neighbours named the bread for her home state.
